With 1-1-1 and two roamers you can have your supports help out anywhere it's needed. Sometimes it happens a support ends up being a lot offlane, but most of the time the focus is on shutting down the midlane as much as possible.
are we talking in ur games, in pro games, or both?
I still see alot of 2-1-2 in 3k or 2-jungle-1-1, cos retards aren't capable of pulling off an effective tri lane or roaming support duo..
because there are bunch of heroes that have great laning presence in offlane nowadays.
in 6k people usually go support ns, bane, lich, undying, slardar, tuskar with + 1

I am in a low 5k bracket and 2-1-2 is extremely common. Trilanes aren't really a thing neither are junglers though you see the occasional one here and there.
I actually had 3 jungle once, we had a doom/bloodseeker and enigma and they all were contesting their own last hits, doom fed offlane so he just went jungle, man that was 1 of the easiest losses I've ever had.
