While it is not bad if everyone can be pro. But not everyone agree, some of them want to explore by self.
Some people just don't like always following thing and sometime want some freedom.
Actually it is better if they split it (Let ppl who like doing that follow that Azami and the others follow another one with freedom). But since it is a school with single system a conflict happen (Why not Azami make their own academy?). Then compete later (Which won't happen)

Azami's just lost. While his way would create an army of good chefs, none of them would ever break the barrier. Cuisine has to evolve, if not, we would all still be eating raw meat and food without spices.

i feel like azami's ideology isn't that bad,if everyone's going to get all elite's ten level of cooking,why not? like science,it could make faster progress on cooking(since everyone got the general idea and practicing/researching is going to be much faster),and the good ones will eventually made their own dishes anyway,not gonna stay not making new stuff forever(or maybe gain their recognition and be allowed)
at least the normals will also get better stuff too,and can be guided or something
